Soba Noodle Broth Bowls with Shrimp and Bok Choy
These fragrant Asian noodle bowls are made with soba, shrimp and bok choy in a fragrant ginger-infused broth.

I just lately joked with a close friend that I’m on the “Asian soup diet” because I basically just can't halt cooking, order and having Asian-encouraged soups. Produced with fragrant ginger, toasted sesame oil and any blend of noodles, protein and vegetables, Asian soups are the ultimate meal-in-a-bowl.

When I usually use rice noodles or swap the noodles out for shredded cabbage, just lately I was craving hearty soba buckwheat noodles. Produced with a hundred% buckwheat, these noodles have a good texture and mouth watering flavor.

Shrimp is generally my protein of choice due to the fact I generally have a bag of wild shrimp in my freezer but you could just as simply use pulled chicken or thinly sliced sirloin steak. If you have wontons on hand toss a pair of all those in as properly. Bok choy provides texture and fiber retaining you total and glad for hrs to come. Kale and cabbage operate properly too if you do not have it on hand.
Your spoon is ready.
