Fish, Parsley and Tomato Stew #Recipe
I was chatting on the phone with my mom the other day when she pointed out a tasty new recipe she had experimented with for fish stew.  I knew I had to consider it as I listened to her rattle off the components.  Here is the recipe I ended up with after some modifications.
1 large onion, chopped
2-4 garlic cloves, minced
two/3 cup fresh parsley, chopped
1 medium tomato, chopped
two tsp of tomato paste
eight ounces of clam juice
2/three cup dry white wine
one.5 to 2 pounds fish fillets (you can use halibut, cod, sole, red snapper or sea bass), minimize into two-inch pieces
one/2 cup water if you would like your stew a lot more liquid
Touch of dry oregano, Tabasco sauce and thyme
Salt and pepper to taste
Heat olive oil in heavy massive pot and include chopped onion and garlic and sauté 4 minutes.  Add parsley and stir 2 minutes.  Plop in your chopped tomato, tomato paste and cook two-five far more minutes.
Add clam juice, dry white wine, and fish (I utilized halibut and genuinely loved it) and simmer right up until fish is cooked by way of, significantly less than ten minutes.  Top off with seasoning and any additional water if required.  I felt my stew required a excellent cup of water to give it a lot more liquids but possibly I had basically simmered the juices too prolonged.
Salt and pepper to taste.  I served this stew with roasted garlic bread at a dinner party.  I will absolutely be generating it once more!
