- 3 smaller Yukon Gold potatoes
- 3 smaller purple potatoes
- 3 smaller purple potatoes
- 4½ teaspoons further virgin olive oil, divided
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- For the Romesco sauce:
- 12 ounces jarred roasted purple peppers
- ten garlic cloves, peeled
- one slice of bread (any sort) or a single sheet of Matzah if creating it for Passover
- one /2 cup chopped toasted almonds
- 2 tablespoons further virgin olive oil
- one tablespoon furthermore one teaspoon purple wine vinegar
- one teaspoon sweet or smoked paprika
- ½ teaspoon salt
