Substances

  • 3 smaller Yukon Gold potatoes
  • 3 smaller purple potatoes
  • 3 smaller purple potatoes
  • 4½ teaspoons further virgin olive oil, divided
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Romesco sauce:
  • 12 ounces jarred roasted purple peppers
  • ten garlic cloves, peeled
  • one slice of bread (any sort) or a single sheet of Matzah if creating it for Passover
  • one /2 cup chopped toasted almonds
  • 2 tablespoons further virgin olive oil
  • one tablespoon furthermore one teaspoon purple wine vinegar
  • one teaspoon sweet or smoked paprika
  • ½ teaspoon salt

Recommendations
