Ideal Damn Instant Pot Vegan Chili
If you liked my unique Vegan Chili recipe, AND you have an Quick Pot…..you’ll like this new and improved recipe.

- two tsp ground cumin
- 1/4 cup chili powder
- 1 15oz can pinto beans (lower sodium)
- one 15oz can kidney beans (minimal sodium)
- 1 8oz can tomato sauce (lower sodium)
- one 15oz can diced tomatoes (fire roasted)
- one 6oz can tomato paste
- two Tbs Masa Tamale Flour

Chop all greens and add to IP

Lightly saute veggies in a little sum of water, veg broth, or bean juice (aquafaba) till softened

If utilizing – include seitan, cauliflower crumbles, or mushrooms for a meat substitute.  Note:  All of these are optional and you could just add yet another can of beans.

Add water and all spices except Masa and stir well

Combine in beans and stir properly

Add tomato sauce and diced tomatoes to Prime of stew and DO NOT STIR

Add lid to IP and set to Guide mode for 10 minutes.  Allow to naturally vent when finished for 10 minutes ahead of Carefully releasing any added stress

Stir in tomato paste, any final minute garnishes, and Masa flour.

Allow rest for ten minutes to thicken, stirring sometimes
Cauliflower Crumble Recipe Only use Soy Sauce to spice, nothing else.
Garnish with pickled jalapeños, green onions, or my green chili sour cream.
