It only will take a handful of elements that I bet you already have in your kitchen. Throw out your bottled dressings. No, significantly… go chuck them out. Once you realise how easy and rapidly it is to make your very own, you’ll be providing the bottled stuff the flick.
- Don’t have red wine vinegar? Substitute with lemon juice (FRESHLY SQUEEZED!)
- Garlic? YES. Just trust me.
- Dried oregano? Yes. In the seasonings part of your supermarket. GET ON IT.
- Want to bulk up your salad? Include lettuce (I enjoy Romaine or Cos).

- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- one teaspoon minced garlic (or 1 huge garlic cloves, minced)
- two teaspoons dried oregano (plus additional to serve)
- ¼ teaspoon salt
- one huge cucumber, halved lengthways and sliced
- four vine ripened tomatoes, reduce into wedges
